Real sourdough takes three days: one to wake the starter, one to mix and fold, one to rest and bake.

Most of that time you are doing nothing, and the nothing is the recipe.

The baker I learned from said bread is ninety percent patience and ten percent flour.

My first loaf was flat. My tenth was good. My fortieth is the one I bring to friends.
